Warmly inscribed & signed by restaurateur Alice Waters to Chez Panisse's occasional organic produce provider and sometime cook John Hudspeth, on a front flyleaf. Charles Ranhofer was the chef at Delmonico's, New York's first and perhaps most beloved restaurant. At 1183 pages, the volume is massive and encyclopedic, with hundreds of reproduced menus as well as cooking instructions and recipes.
